Mandarins (Back)
Tiny peeled tangerine segments we never insult them by calling them easy peelers. They have wonderful aromatic skins and their flesh is sweet and perfumed. We like to show them respect especially at Christmas when they come into their own. |

Lemons (Back)
Their juicy pale yellow acid flesh enhances almost any food and never fails to liven up a taste bud. The smooth skinned are best for juicing and cooking and the knobbly for grating. Our Caramelised Zest is very pretty and very delicious. |

Brightest of greens they have a sharper more astringent flavour than a lemon. It gives a valuable little lift in lots of recipes like in our Pineapple Lime and Mango Compote and is wonderful squeezed over Papaya and Mango. We Caramelise Lime Zest too. Is there no end to our talents ? Well probably but meanwhile we will continue to keep coming up with good innovative ideas. |

Grapefruit (Back)
Funny things grapefruit. They don’t ripen once they’re picked. The yellow ones are called white and the pink ones called Ruby. The pinker the flesh the sweeter the fruit except the green skinned ones called Sweetie, which are so sweet they need no extra sugar. If they feel very heavy buy them as that is the sign of being very juicy inside. |

Kumquats (Back)
If we’re strictly speaking they’re not part of the citrus family. The shape and size of a large olive they have edible rinds which is sweeter than the sour pulp. Eaten together they produce a wonderful sour-sweet sensation. Sliced they make a good addition to many salads and sandwiches. |
